  • Soft boiled Araucana’s egg, purple mustard béchamel sauce, spinach and cocoa.

Main courses

  • Skate wing with confit lemon and green Lucques olives, Belgian endives glazed with beetroot.

  • Confit pork belly, glazed baby carrots, creamy polenta and Aomori apple vinegar.
